Choosing a 2nd profession for my Monk...
Bear in mind that I currently have an Ele/Monk. I just started a new Monk primary. What would be a good 2nd for her? I do not like to slash things. I'm thinking of protection/healing being my main focii.

I would go Warrior for the stances, or Mesmer for the energy drains.

Just to make things difficult I'd recommend Necro for Well of Blood and Offering of Blood.
Seriously though, Monk is extremely potent all by itself - whatever you add as your secondary is really just going to be added spice. Most of the time you will be being called on to heal, heal again, heal some more, and heal me one more time. So take whatever suits your fancy; you will still function perfectly well in your primary role. (Well, unless you don't put points in your main attributes anyway).
Also - SAVE those skillpoints. Don't spend them willy nilly. After Ascension you will be able to gain access to all the secondaries (only can have one at a time, but you can switch at will after you've done the right quests) so you can then use those skill points to cherry pick skills from whichever secondary you want at the time.

Although once you get to level 20, you earn skill points with experience ...

The benefit of a Mo/Wa with Tactics as the third or fourth attribute is that the stances don't take much away from your overall energy pool, like many Ele/Mes/Nec enchantments do; and as they aren't enchantments, hexes or spells themselves, can't be removed or interrupted easily.
Whatever secondary is chosen, the point should be about keeping the monk alive and full of energy. Here are my top three recommendations...
Warrior/Tactics
Mesmer/Inspiration
Ranger/Beast Mastery or Wilderness Survival

To be honest I'd skip out on the Mo/W with the stances as in my experience you aren't nearly as worried about low-dps warriors as a monk. Your real threats are high-dps Elementalists and disrupters. Not to mention the fact that you will rarely have the chance to use stances because when you cast a heal (which will be often) you'll drop your stance. (Please someone correct me on this if I am wrong.)
Sorry I couldn't give you an exact answer, but I figured I'd chime in with my opinion on a pure-healer Mo/W build.

Mo/E offers added protection themed skills like Ward Against Melee.
Mo/N offers energy boosts like Offering of Blood
Mo/W offers a lot of self-only defensive stances, as well as some helpful adrenaline skills like Watch Yourself (if you swing with a melee weapon between casts)
Mo/Me gives you the ability to steal energy from opponents to keep you going (probably more of a PvE build)
Mo/R doesn't offer much

it doesn't?
Melandru's Resilience makes a great combo with Draw Conditions. great for self-healing and energy boosting. Dodge and Storm Chaser are good speed boosts, and some traps can be useful. Mo/R offers good self-preservation skills.

Yeah, and Mo/R also gives you healing spring (which heals ## hp every 2 sec in an area, that means allies too!), the traps (as said before, for some self protection)...and if you feel like you want to help damage enemies as well, apply posion is always good
